Tex-Mex Enchiladas.

Being Texan, I can confirm that this is the closest you're going to get to Tex-Mex when cooking at home.

You Will Need:
* 1 cup of cheddar cheese
* Choice of filling (cheese, shredded chicken, taco meat)
*Enchilada Sauce (can be storebought)
* Tortillas

Roll your tortillas in your choice of filling and place them in a pan. I chose shredded chicken with green chiles and diced tomatoes w/ cilantro.

I also used home-made tortillas (not necessary)

Next, add a layer of cheese on top.

then, add some enchilada sauce evenly and put even more cheese on top of that

Bake at 375 for 10-20 minutes and serve! I used refried beans and home-made guacamole as a side dish!
