This is a issue I have seen before on other forums and I think needs to be fixed.
The introduction subforum is the most easily spammed subforum because people just post the same response on all the threads. This is a easy way for people to artificially increase there post count. This can usually be solved easily by making posts in introduction threads not count on one's profile.

I agree with this, as it's an easy way for people to sit and increase their post count.
I often welcome people to the forum, and if they seem interesting to me, I take good time and effort to give them a good and legitimate welcoming. I disagree heavily with this, and if you think that welcoming people into the forum is "spamming" then you're wrong. Besides, who gives a fuck if somebody chooses to welcome everyone and they by-accident or purposely do it to increase post count. Does post count matter to you? Is it a bad thing to want to welcome everyone?

I honestly don't care because most members already know me so my post count shouldn't prove anything else.

Usually it's a given on forums that posts in introduction sections don't increase post count. Not only because it is easily spammed, but most people don't sincerely care to welcome but rather an easy way for a +1.
Me personally, I don't care either way. Post count is nothing to brag about and it's not an advantage or anything.
Staff are the ones who copy and paste responses, because it's their job to welcome and remind users to read the help docs.
